Here's how to make a healthy, delicious, fluffy pumpkin's pancakes from scratch;

super easy and quick!

Pumpkin Pancakes with honey

12 servings

Ingredients

  • 2 large eggs

  • 1.5 cups milk

  • 1 tablespoon honey

  • 1 teaspoon vanilla extract

  • 1 cup pumpkin puree (see instructions in part 1)

  • 1.5 cup whole wheat flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 2 teaspoon ground cinnamon

  • 3/4 teaspoon ground nutmeg

  • 1/2 teaspoon ground ginger

  • Pinch of salt

  • Coconut oil or butter for the pan

Instructions

Part 1- Preparing the Pumpkin Puree

  • First, break the pumpkin into 4 or 5 pieces and remove the seeds.

  • Add just enough water to the pumpkin and cover with a lid to steam boil.

  • When cooked, peel off the skin, then mash into a puree.

  • Leave the puree to cool down.

Part 2- Preparing the pancake batter

  • Sieve the flour and add the baking powder, baking soda, cinnamon, nutmeg, ginger, and salt and mix.

  • Whisk the eggs with milk, honey, and vanilla, then add the pumpkin puree and whisk

  • Whisk the the above two steps together, and leave it to rest for 10 minutes.

Part 3- Cooking:

  • Over medium-low heat, grease some oil or butter onto a frying pan

  • Using a 1/4 measuring cup, pour the batter mix onto the frying pan and gently spread it out with a spatula.

  • Cook until the edges are set and it begins to bubble in the middle.

  • Turn and cook for a further 2 minutes or until the bottom is lightly brown and the pancake is thoroughly cooked. until the pancakes are cooked through.

  • Flip to cook the other side for a couple of minutes or

  • Repeat with the remaining batter.
